When people ask me if they should get an air fryer, my response is to get an air fryer and oven combo so that you can have an appliance that does multiple things without taking over your counter. Yes, I do have a double oven, but something about the countertop air fryer and oven makes meal prep less daunting. The fact that it turns off after the selected time is a huge bonus because I have been known to forget to set a timer.
You can roast two sheets of vegetables and protein at a time or even cook a whole chicken in it. I have also found that I can bulk air fry eggs to give them the perfect hardboiled texture. I love and use the Cuisinart model daily, but others swear by Emeril Lagasse’s Power Air Fryer 360 and Breville’s Smart Oven Air.

One of the things I hate about big meal prep days is the big mess. Using containers that can double as bakeware and storage will save you a few dishes. The only storage container I trust in the oven is Pyrex glassware.
A favorite way I use the Pyrex casserole dishes is to prep two to three lasagnas, pasta bakes or pans of enchiladas at one time. The extra time to prep more than one time is minimal, but it saves me at least an hour in subsequent weeks. Just bake, allow to cool and store the extra pans in the freezer for up to four months.
